Su Nuraxi stagionato

Su Nuraxi stagionato, exclusively produced from very fresh sheep's milk coming from the Sardinian inland's pastures, can be defined the King of the traditional cheeses for its unmistakable characteristics and its very ancient origin.

The texture is hard, the colour white or pale yellow, sometimes it has small holes. The flavour is always strong with a growing spicy taste according to the maturing. It has a characteristic rounded shape, a medium weight of 2,8 kg, and a maturing of more than six months.

It is very nourishing and digestible and you can use it either as table cheese or as seasoning, sprinkling it on ravioli di ricotta and on culurgiones, traditional ravioli filled with potatoes, mint and cheese, kneaded spike-shaped.
